Normalized latitude of a map row: 0 at the pole (cold), 1 at the equator
(hot). Exported because anything that reasons about latitude — the seasonal
swing in SeasonCycle, for one — has to agree with the temperature field
cell for cell, and the only way to guarantee that is to share the formula.

'both' puts the equator at the map centre; 'north'/'south'
put it at the bottom/top edge.
